Easy Enchiladas

These are the easiest enchilada's ever. I have wanted to post this for a while...

Take 3 pieces of chicken
1 can of black beans
1 can of corn
1 can of salsa

Throw these ingredients into the crock pot on low to cook for about 6 hours.

Take the ingredients out of the crock pot and put into a bowl and shred the chicken.

Mix in some cheese and enchilada sauce.

Take some tortillas and put the mixture in the tortillas, roll them up then place them in a pan.

Take some more enchilada sauce and pour over the top, I am generous with the amount I put on and tried green enchilada sauce last time (which is Jared's favorite) and it was delicious. Then you douse the top with cheese and cook at 350 for about 25 minutes, until the cheese melts. Delicious!!!

Hey Michelle,

I was blogging at 11 o'clock at night and thinking that is a great idea for dinner tomorrow and then remembered I used the last of my chicken Sunday, what's a girl to do. I've already been to the store 3 times this week.

I love the post from Hayden. Tell the boys hi and I wish you could have been here for the party too. We'll just have to figure out a way to get together sooner than later!

I loved your post about your age. I would totally take advantage of that while it lasts! YOu are so cute, I bet people love finding out you have 2 kids and just think what a cute little mom you are! That post was so fun to read- I love the way you wrote it!

Definitely have to try, and I am always up for anything easy and in the crockpot. It is so funny that you have those Brian Regan videos posted. My hubby and I have been on a Brian Regan kick lately. We got his DVD and it is hilarious! We even downloaded to the ipod and listened at night on the drive out to Utah while the kids were sleeping. So funnny.
